Five minutes drive from the Grand Cru slope of Chablis itself, along the road to Tonnerre, you find the peaceful village of Fleys - home of the Chablis Premier Cru vineyard, Fourneaux.
Jérémy Venon has lived in Fleys his entire life, on virtually the same street, immersed in the seasonal ebb and flow of the surrounding Chardonnay vines - some of the finest in the world.
In 2013 an opportunity arose to purchase a tiny 0.5 acre parcel on the hill of Fourneaux, and a life long dream became reality. He has added two more tiny parcels of vine since his first lucky purchase, one next to Vaucoupin and one in Tonnerre.
This is absolutely classic Chablis, displaying powerful intensity, dense minerality and superb length from this self-taught winemaker.

TASTING NOTES:
Clear colour with golden highlights. The nose is flattering, fruity and fresh. The palate is pure, long chiseled on a nice mineral-saline background.
VINIFICATION:
100% of the ageing is done in stainless steel vats with gentle pressing using a pneumatic press. Malolactic fermentation is subsequently initiated after the wine has cooled and rested by heating again to 18 degrees for an indefinite period, a few weeks to a few months. After racking and selection of fine lees, ageing continues for a few months in stainless steel vats. Finally, the filtration and bottling operations are carried out at the estate. All these phases of vinification are carried out with great rigour and require regular monitoring with regard to the evolution of the wine. Strict vinification allows the subtlety of the terroir and the delicacy of the varietal aromas of the Chardonnay grape variety to shine through.
